Odin has mediocre growths if your gonna go Sorc route, Nyx has terrible skill and defenses, and leo isnt that fast (although this can be fixed somewhat by going Sorc and/or giving him speed from pair ups and speed tonics/mess hall) Kaze/Niles are your choices for lockpick users.

How hardcore are you as a player is the biggest question. If you want to enjoy the game and the story, promote when you feel you need the boost. And don't care about reclassing. For medium optimization, you can reclass at lvl10, get 2 more base unit's skills. Promote that class to advanced class, reclass again at lvl15, get 2 more skills at lvl17.
